2015 Clos Salomon Givry 1er Cru

Nose: tart fruit with a mixture of cranberry, raspberry, strawberry, and ripened cherry. Prevalence of earthy soil notes and minerality. 

Palate: Immensely complex showcasing bright red fruit as well as deep dark fruits. There are elements of raspberry as well as cherry cola. This wine has smooth tannins accompanied with subtle oak elements of vanilla. It is tart with a medium body and medium plus acid. Back notes of clay and time stone with herbaceous elements. 

Notes: 
Vines were first planted in 1965 and have had some time to mature, leading to elegance of overall profile. 
It is grown on a hill consisting of many rocky soils most of note being limestone and heavy clay as the roots dig deeper. 
Proximity to the forest about the vineyard leads to early nightly cooling temperatures as well as lending the wine a nice herbaceous element. 
Made using lower overall yield to ensure more quality. 
Farmed using sustainable farming practices. 

Drink: This wine is great now (2020) but will continue to develop for another 5 to 10 years. Well worth the wait of bottle aging. 

Pairing: Pork chop (with cherry sauce), Seared tuna, herb crusted rack of Lamb, roasted mushrooms.
